		</p><p>I think Ella (the princess) will give her Papa fits when she is 15 or 16&#8230; and Lily (the artist) will have led the way!</p>
<p>We travelled for holidays this year. Thanksgiving was spent in Florida with David and family. The girls shared their many interests with us: everything from Princesses and dancing to art work. It&#8217;s trite, but they are growing up far faster than I would wish.</p>

    </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">2 lb boneless, skinless chicken cut into 1 inch pieces</li><li id="zlrecipe-ingredient-1" class="ingredient">1 Tbsp Cajun/Creole seasoning</li><li id="zlrecipe-ingredient-2" class="ingredient">1 tsp dried thyme leaves</li><li id="zlrecipe-ingredient-3" class="ingredient">2 Tbsp vegetable oil </li><li id="zlrecipe-ingredient-4" class="ingredient">1 medium onion, coarsely chopped</li><li id="zlrecipe-ingredient-5" class="ingredient">1 green bell pepper, coarsely chopped</li><li id="zlrecipe-ingredient-6" class="ingredient">1 c. thinly sliced or julienned carrots</li><li id="zlrecipe-ingredient-7" class="ingredient">1/4 thinly sliced celery</li><li id="zlrecipe-ingredient-8" class="ingredient">4 cloves garlic, minced</li><li id="zlrecipe-ingredient-9" class="ingredient">2 Tbsp flour</li><li id="zlrecipe-ingredient-10" class="ingredient">1 can (14 oz) chicken broth</li><li id="zlrecipe-ingredient-11" class="ingredient">1 can (14 oz) stewed tomatoes, undrained</li><li id="zlrecipe-ingredient-12" class="ingredient">Cooked rice (about 2 cups should work) </li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">Place chicken in a medium bowl, sprinkle with thyme and seasoning, toss well. Set aside</li><li id="zlrecipe-instruction-1" class="instruction">Heat oil in a LARGE saucepan over medium high heat. Add onion, bell pepper, carrots, celery and garlic. Cover; cook 10 minutes or until veggies are crisp-tender, stirring once.</li><li id="zlrecipe-instruction-2" class="instruction">Add chicken and cook 3 minutes, stirring occasionally.</li><li id="zlrecipe-instruction-3" class="instruction">Sprinkle with flour and cook 1 minute, stirring frequently.</li><li id="zlrecipe-instruction-4" class="instruction">Add chicken broth and tomatoes (you can add a dash of hot pepper sauce if you like at this point). Bring to a boil over high heat.</li><li id="zlrecipe-instruction-5" class="instruction">Reduce heat to medium and simmer uncovered at least 10 minutes or until chicken is no longer pink in center and sauce is slightly thickened.</li><li id="zlrecipe-instruction-6" class="instruction">To serve: ladle into bowls and top with 1/2 cup of rice.</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes">The original recipe used only 1 lb. of chicken and 1 tsp of seasoning... I like this version better, myself! </p><p class="notes">You could also add shrimp to it.     </div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient">Cornbread (I used Martha White cornbread mix)</li><li id="zlrecipe-ingredient-1" class="ingredient">1 egg</li><li id="zlrecipe-ingredient-2" class="ingredient">⅔ c. buttermilk</li><li id="zlrecipe-ingredient-3" class="ingredient">¼ - ⅓ c. bacon fat</li><li id="zlrecipe-ingredient-4" class="ingredient">3 or 4 sticks of celery, sliced thin</li><li id="zlrecipe-ingredient-5" class="ingredient">1 medium to large onion, chopped coarsely</li><li id="zlrecipe-ingredient-6" class="ingredient">1 stick of butter (BUTTER, not margarine!)</li><li id="zlrecipe-ingredient-7" class="ingredient">chicken or turkey stock</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction">For the cornbread: preheat oven to 450°F. Instead of the oil in the recipe on the bag of mix, put about  ¼ to ⅓ c. of bacon grease in an iron skillet. Put the skillet in the oven to melt the bacon grease. Combine other ingredients (egg, buttermilk, cornbread mix) in a bowl and mix lightly. When the fat is melted and hot, remove the skillet from the oven and pour the melted fat into the cornbread mix. Stir lightly to combine and immediately pour into the hot skillet. Bake. Remove cornbread from the iron skillet, because you need it for the next step.</li><li id="zlrecipe-instruction-1" class="instruction">Dressing: Using the same iron skillet, melt the butter and add the celery and onion. Cook until the onion is clear. Turn off the heat and add the cornbread (crumbled). Mix so that the onions and celery are evenly distributed. Add stock/broth to moisten. It should be fairly wet, since the dressing will be baked afterward.</li><li id="zlrecipe-instruction-2" class="instruction">Move the dressing into a baking dish. At this point, you can put it in the fridge until you are ready to bake it. Bake at 350°F until hot all the way through.</li></ol><p id="zlrecipe-notes" class="h-4 strong">Notes</p><div id="zlrecipe-notes-list"><p class="notes">My cornbread mix uses egg and buttermilk. It is "Southern cornbread" -- not sweet. My brother and I had a competition going for a while, but I&#8217;ve deferred to him for the annual Thanksgiving carrot cake. Auburn, AL  that was published in 1975.</p>

<p>Over the weekend of September 17, my brother-in-law, Chuck tied the knot with Ellie on Block Island (RI). Of course, feeding the new spouse wedding cake continues to be quite the event! Quick, but fun weekend seeing a place, visiting with family and of course, celebrating with the new bride and groom.</p>
<p>I&#8217;m finding my little point and shoot Nikon to be a bit frustrating &#8212; a bit slow to respond, never sure where my focus is most clear. I am spoiled with my Canon 50D, but it is a bit large to carry on a plane, especially for a short weekend trip. Oh well.</p>

<h3>Excerpts from a Cat&#8217;s Daily Diary..</h3>

<p>My captors continue to taunt me with bizarre little dangling objects. They dine lavishly on fresh meat, while the other inmates and I are fed hash or some sort of dry nuggets.</p>
<p>Although I make my contempt for the rations perfectly clear, I nevertheless must eat something in order to keep up my strength.</p>
<p>The only thing that keeps me going is my dream of escape. In an attempt to disgust them, I once again vomit on the carpet.</p>
<p>Today I decapitated a mouse and dropped its headless body at their feet. I had hoped this would strike fear into their hearts, since it clearly demonstrates what I am capable of. However, they merely made condescending comments about what a &#8216;good little hunter&#8217; I am. Jerks.</p>
<p>There was some sort of assembly of their accomplices tonight. I was placed in solitary confinement for the duration of the event. However, I could hear the noises and smell the food. I overheard that my confinement was due to the power of &#8216;allergies.&#8217; I must learn what this means and how to use it to my advantage.</p>
<p>Today I was almost successful in an attempt to assassinate one of my tormentors by weaving around his feet as he was walking. I must try this again tomorrow &#8212; but at the top of the stairs.</p>
<p>I am convinced that the other prisoners here are flunkies and snitches. The dog receives special privileges. He is regularly released &#8211; and seems to be more than willing to return. He is obviously not very smart.</p>
<p>The bird has got to be an informant. I observe him communicating with the guards regularly. I am certain that he reports my every move. My captors have arranged protective custody for him in an elevated cell, so he is safe. For now&#8230;&#8230;&#8230;&#8230;&#8230;.</p>
